Does  anyone  know  of the company  that  sells  a smaller 57 replica steering  wheel  ?

Ray Summitt

I have the 15" T-Bird replica wheel on my fairlane. It bolted right on. I got it from a place called allwebretro.com for $309.99   Their part number is R004.  Their phone number is 1-877 570 6961.
I didn't like the wheel center emblem and the stock emblem wouldn't fit so I modified an escape mag wheel center cap to fit.    Ray

There are companies that will "shrink" a stock wheel (at great expense). I have seen one for a T-bird that MIGHT work. That are the options I am aware of.

Or you can make one from a '57 center and another wheel with the diameter and color of your choice.

Here's an outfit that makes a 15" wheel for a 56-57 ford $315 there number is 866-715-0100 or 559-595-0100 they advertise in DRIVE magazine.

I reduced the size of a 57 wheel several years ago after seeing a Vette one done at a car show.  The secret is to cut a hole in a piece of 3/4" plywood that is the size you wish to achieve.  This hole is what you bend the ring to fit.  In my case I cut 1" off each arm, split the ring, removed phenolic coating and cut the ring to fit the hole in the plywood.  Once it fit the hole I ground the ends of the ring and welded it back together, ground the weld and set about rebuilding the outside.  This was done with POR 15 steering wheel restoration product.  Hand formed  the finger grips and sanded over and over to get it right.  Just takes time.  Still haven't installed the wheel on anything as I took a different direction on the Ranchero.

Go for it,
Jack
