Hello, I just removed an old original sagging dash pad from my 57. Obviously there is a lot of glue and crap still left on the painted surface. What is the best way to remove it and try to keep original painted surface. I have an old wreck of a Country Sedan that someone had done this to long before I got it and it looks as if the paint on the dash is all original and looks nice and clean.

Mineral spirits should soften the glue and allow you to wipe it off.  Just don't soak it too much, the paint on that dash is most likely enamel.  DO NOT use lacquer thinner or acetone as both will lift the paint right now.
