Jeff,   I agree with going with the largest diameter tire possible in back of a '57.   They need the tire to fill up the well and look proportional.   

When you get to doing the bodywork, let me know and I'l send a picture of the modification needed on the front of the lower quarter panel needed to use taller tires.    It is an easy mod, still looks stock, but makes changing tires easier.  We now modify every '57 we do by now, as you never know what wheel tire combo you may use in the future.
